Description

The grapes intended for the production of the ‘Rosae’ wine are selected and harvested manually through an early harvest, in order to preserve their freshness, flavor and acidity. This is followed by cold maceration of the free-run must that lasts between 6 and 12 hours. Subsequently, the must is drawn off, during which it is collected without pressing and kept at a low temperature. The fermentation process continues with the second fermentation in an autoclave, using selected yeasts at a controlled temperature of 16C. Finally, the wine remains in contact with the yeasts for a period that varies from 60 to 120 days, favoring the development of aromatic complexity and structure.

The origins of the ‘Rosae’ wine are found in the fertile soil of Sorbara di Bomporto, in Modena, where approximately 6 hectares of vineyards extend at 30 metres above sea level.

The terrain, characteristic of the Emilian plains, is composed of a mosaic of clay, silt and alluvial deposits.

This composition, enriched by a notable presence of minerals, contributes to giving the wine a distinctive complexity.

In this area, where winemaking tradition merges with an exceptional terroir, Lambrusco di Sorbara ‘Rosae’ is produced, which represents a tribute to the richness and diversity of the Emilian landscape.
