Description

The Classic Method Sparkling Wine ‘Sigillo’ is produced by soft pneumatic pressing, with a very low yield of 65%. Fermentation takes place in steel tanks, using selected yeasts and maintaining a controlled temperature between 18 and 20C. Subsequently, in the month of April of the year following the harvest, the wine is transferred into traditional champagne bottles. Refermentation takes place at temperatures between 14 and 16C, reaching an overpressure of six atmospheres. The refinement continues for a minimum period of 24 months on the lees in the bottle, followed by natural clarification in pupitre. Disgorging is carried out at least 6 months before the wine is put on the market.

The Sigillo vineyards are located in Sorbara di Bomporto, in the province of Modena, an area that extends over approximately 6 hectares in a flat region 30 meters above sea level.

The soil, typical of the Emilian plains, is a mixture of clay, silt and alluvial components, characteristics that create a terroir rich in mineral substances and ideal for the cultivation of robust vines.

This richness of the soil, together with the mild climate and the strategic position between Modena and Carpi, gives Lambrusco di Sorbara DOC unique qualities and a distinctive aromatic profile, rooted in the generosity of this fertile land.
