Questo vino spumante, prodotto dalle terre generose di Sorbara di Bomporto, esprime un bouquet aromatico che evoca la frutta fresca, il fiore di pesco, l’albicocca e la mela golden, fondendosi in un palato dove l’acidità moderata esalta un’armonia unica e una ricchezza di sapori.

Perfetto compagno di brindisi, l’Orocolato è l’abbinamento ideale per crostacei, pietanze piccanti e irresistibili dessert specialmente quelli da forno, celebrando ogni momento con la sua effervescenza elegante.

Descrizione

The grapes intended for the production of the ‘Orocolato’ wine are harvested manually between the end of August and the beginning of September, in order to maintain freshness, aromas and acidity. The vinification takes place in white, with a gentle pressing of the must. The fermentation is carried out using selected yeasts at a temperature of 18. After the completion of the fermentation, the wine remains on its noble lees for at least 60 days. This period allows to promote the autolysis of the yeast cells, thus helping to enrich the wine with complexity and texture.

Immersed in the lush nature of Sorbara di Bomporto, in the province of Modena, the vineyards that give life to Orocolato extend over a flat terrain characteristic of the Emilian plains.

At around 30 metres above sea level, the 6 hectares of vines benefit from clayey, silty soil rich in minerals, which contributes to the intensity and complexity of the flavours of this sparkling wine.

The interaction between this fertile soil and the typical climate of the region creates the ideal conditions for the cultivation of the Pignoletto, Malvasia di Candia and Trebbiano vines, which blend harmoniously in the Orocolato.
